Exploring New Recipes Using Fruit And Veg From Oddbox

Have you ever heard of Oddbox before? If not, Oddbox is a subscription service that delivers rescued fruit and vegetables to your door. These fruit and veg could be in the box for a variety of reasons including; too odd, too many, too ugly, too big and more. Oddbox resuce fruit and veg before they even leave the farm. Many farms have left over fruit and veg because the produce is often not up to the standards of supermarkets, meaning this will be wasted. This is where Oddbox come in and take the fruit and veg that might be too ugly or too odd because they don’t fit the beauty standards of the supermarket guidelines. They then save the produce from the farms and put it into the subscription boxes delivered to your door.

What was in my box?

I was quite surprised with how much was actually in my box and the variety considering I went for a small fruit and veg box.

Exploring Recipes Using The Rescued Fruit And Veg

I love cooking and baking and the vast amounts of foods that can be created while doing so. It was exciting to have the random mix of fruit and veg and exploring what meals could be created with these. I’d never heard of kohlrabi before so this was particularly exciting to see what it would taste like. Below you will find a few meals and desserts I made using the rescued fruit and veg from Oddbox.

Stuffed peppers, potato wedges & kohlrabi spicy fries

For the stuffed peppers I first cut the pepper in half and filled it in with some butternut squash pasta that I had left over. I then sprinkled some vegan cheeze and breadcrumbs over the top and baked for approximately 20 minutes at 200 degrees.

For the kohlrabi spiced fries I used half of the kohlrabi and cut into long strips to imitate fries. I think popped into a bowl of vegetable oil, chilli powder and a tiny pinch of cayenne pepper and mixed until the kohlrabi was covered. These also went in for approximately 20 minutes at 200 degrees along with the stuffed peppers. I absolutely loved these, something different and I will definitely have again given the chance.

Apple crumble

This was my first attempt at making apple crumble and it went down a treat! I used the Oddbox recipe but used apples instead of plums and made it a vegan version. It was delicious!

Butternut squash and kohlrabi puff pastry rolls

I made these puff pastry rolls using the recipe I found on Oddbox’s website but used pumpkin seeds instead of pecan nuts. I wasn’t a massive fan of this recipe to be honest, although it was interesting to try!

Kale crisps

For this I simply cut the kale into small pieces and covered in oil and thyme seasoning. I then placed the pieces onto a baking tray and into the oven for 20 minutes at 180 degrees, turning half way through. I absolutely loved these! I’ve not used kale before but this was something I would like to do again.

Would I do this again?

I loved trying out Oddbox and exploring different recipes. It was a new experience and great for a challenge of creating foods from the box, particularly creating recipes with the kohlrabi I hadn’t heard of before. It is definitely great if you love being creative, randomness and saving fruit and veg from being wasted!
