I’ve got a simple, yet delicious recipe for 12 vegan cupcakes to share with your loved ones! First of all we need to see what ingredients are needed for this recipe, so go ahead and gather the ingredients from below!
Recipe:
- 150g Vegan Butter
- 300ml Soya Milk
- 1Tbsp Cider Vinegar
- 1Tbsp Vanilla Extract
- 300g Flour
- 200g Caster Sugar
- 1Tsp Baking Soda
Topping:
- 100g Vegan Butter
- 300g Icing Sugar
- 1Tsp Vanilla Extract
- 1Tbsp Soya Milk
- A Handful of Strawberries (optional)
Method
- Preheat your oven to 180C and line a muffin tray with 12 cases.
- Mix together the soya milk and cider vinegar in a jug and put to the side for a few minutes.
- Place the butter and sugar in a separate bowl and mix together until you get a creamy texture.
- Sift in a little portion of the flour and baking soda and mix together.
- Add a little bit of the soya milk and cider vinegar combination to the bowl and mix.
- Alternate between adding the flour and milk until you get a smooth batter.
- Add in the vanilla extract and combine.
- Evenly spoon the mixture into the cupcake cases.
- Bake in the oven for 15 minutes. Put a butter knife through the cakes and check to see if it comes out clean. If it does then the cakes are done, if it comes out with some cake on then put the cakes back into the oven for a few more minutes.
- Once done, pop the cakes on a cooling rack if you have one or on the side for at least 10 minutes to cool down.

Decorating
- Cream the butter, icing sugar, milk and vanilla extract together until you get a smooth, thick consistency.
- Once the cakes have cooled down you can add the frosting to the cakes as you please.
- You could even spice it up a bit more by adding some cut up strawberries on top to create a heart shape!
- Finally… enjoy!
